  • ¼ tablespoon of red chili powder.

  • Two tablespoons of tomato sauce.
  • Two tablespoons of soy sauce.
  • A spoonful of lemon juice.
  • A handful of coriander leaves.
  • Two tablespoons of oil.
  • Salt to taste.

Preparation

  1. The first thing you must do is blend the red chilies in a mixer, then grind until you get a thick paste.
  2. In a medium sized skillet with a little oil sautΓ© the onions over medium heat until transparent.
  3. Then incorporate the garlic and keep sautΓ©ing for a few more minutes.
  4. Add the sliced chopped carrot and let cook until softened. Place the cabbage, along with the salt, pepper, ground red chili flakes, and some powdered red chili.
  5. Then place the tomato sauce and mix well into the skillet.
  6. Place the cooked rice and mix gently, covering the rice completely with the sauce.
  7. Sprinkle the cilantro leaves and squeeze the lemon juice, mix the rice again to absorb everything. Add cilantro leaves to decorate.

Preparation takes about 10 minutes and another 10 of cooking, so in just 20 minutes you will have ready a spicy Mexican rice to surprise your family and friends at lunch or dinner. It’s very simple, you can even add other ingredients such as beans or jalapenos, to get a delicious result.
