Kaon Restaurant is The Tides Hotel Boracay's in-house restaurant located at the hotel's roof deck. It serves an array of Filipino inspired dishes with a different take from their chef, Fernando Aracama. Their menu are filled with Progressive Filipino Cuisines that are familiar yet different, distinct and flavorful in taste. Featuring dishes that are regional in origin, they use locally sourced produce that are cooked in the style of the olden ways.

Camote Nachos

Crispy sweet potatoes topped with spicy beef, beans, cheese sauce and jalapeno peppers. This is the first time I've tasted nachos made of camote. It was really good!

Beef Ribs Adobo

Filipino National Dish of braised beef riblets in soy sauce, vinegar, garlic and peppercorns on fried bananas and garnished with Mango Salsa. It is so tender and has the right balance of the soy sauce and the vinegar. The Mango salsa adds up to the richness of the dish.

Poached Salmon

Fresh Salmon Prime cut simmered in reduced sour cream fat with capers and Shallots.

Lambshank Caldereta

Slow cooked lamb shank in a spiced tomato sauce with bell peppers, carrots, olives, cheese and deep fried potatoes. The meat is tender and very flavorful!

If you want to checkout the full list of their Progressive Filipino Cuisines Menu, it's here. They are open from 6:00 AM to 12:00 MN daily, catering to guests and non guests. The dining hall could fit about a hundred people and can be converted into a function hall for parties, seminars, lectures, and other events. Definitely, Kaon Restaurant is a great place to eat in Boracay.
