Pinoy Food : A Taste of Baler's Ensaladang Pako


I must admit, I am not as Adventurista that you might think when it comes to food. Shame on me! Hahaha! I'm not just comfortable eating dishes that I am not accustomed to. Hehehe! But my recent trip to Aurora province changed it all when my friends from Baler introduced me to their “Ensaladang Pako”.

I’m not sure if this is native to the town or to the province, but I’m certain that the others also have their own version of this – perhaps, with a different name.

How to prepare Baler's Ensaladang Pako

1. Wash the ferns


2. Garnish the pako with tomatoes


3. Add sliced salted egg


4. It's done! Enjoy the pako!


Regardless of how exotic this native salad might be, I really enjoyed it and will certainly ask for another serving on my next trip to Aurora. Be it a main dish, a zesty salad or in our case as pulutan, this is a must-try when visiting the province!

I didn’t just fell in love with Aurora, but also to their “Ensaladang Pako”.

uso din apla ang pako sa baler... sa tayabas, quezon lang ako madals makakain nyan.

Maraming pako from Mount Banahaw. You can easily buy it in Laguna. Pinakamaraming tinda sa Liliw, Nagcarlan and Majayjay. Meron din sa Lucban. It's only 20 pesos per 3 bundles. It's best eaten with tomatoes, onion, itlog na maalat and kesong puti then drizzle with dressing made of suka, calamansi juice, water, salt, black pepper and olive oil (optional). Kung nakapunta ka na sa Lake Pandin sa San Pablo, Laguna, kasama sa menu ng lunch nila ang Ensaladang Pako :)

We have also lots of "pako," that type of ferns which thrive in marsh lands, here in the island. And, exactly we also do the ensalaladang pako here, a truly awesome food recipe.

Dati paborito yung ginataang pako pero noong natikman ko tong ensaladang pako, mas fresh at masarap :)

kulang... samin may bagoong isda. Mas masarap. But this is so good. Hindi madaling pagsawaan. Sayang lang talaga mahirap siya makuha e no. Maricar btw. =)
